12 Medjool dates

1/2 cup whole milk ricotta cheese

2 tablespoons honey plus extra for drizzling

3 tablespoons chopped pistachios

1/2 teaspoon pure vanilla extract

1/4 teaspoon ground cinnamon

1 teaspoon orange zest

1 pinch flaky sea salt optional


Instructions

1. Drain any excess moisture from ricotta on paper towel if watery

2. Mix ricotta vanilla extract cinnamon and orange zest together until smooth

3. Slice each Medjool date lengthwise on one side and remove pit keeping date intact

4. Fill each opened date generously with ricotta mixture mounding slightly above rim

5. Sprinkle chopped pistachios over filling pressing lightly to adhere

6. Drizzle honey over completed stuffed dates

7. Add pinch of flaky sea salt over each if using

8. Serve immediately or refrigerate 15 to 20 minutes for firmer filling

Notes

Drain ricotta briefly before using if it has excess moisture.

Always use Medjool dates for the best size and caramel flavor.
