Description

Watermelon Feta Salad with juicy cubed seedless watermelon, plump blueberries, crumbled feta, and fresh mint and basil, tossed in a bright honey lime dressing. A refreshing stunning summer salad ready in 15 minutes.


Ingredients

Scale

7 to 8 cups seedless watermelon cut into 3/4-inch cubes

1 1/2 cups fresh blueberries

1 cup crumbled feta cheese

Fresh mint and basil leaves thinly sliced

Juice of 1 1/2 limes

1 tablespoon extra virgin olive oil

1 to 2 tablespoons honey to taste

A pinch of salt


Instructions

1. Combine lime juice olive oil honey and salt in a mason jar and shake until well combined for dressing

2. Cube watermelon into 3/4-inch pieces and refrigerate for extra crispness if time allows

3. Combine watermelon blueberries mint basil and 3/4 cup feta in large serving bowl

4. Drizzle honey lime dressing over salad just before serving and toss gently

5. Top with remaining feta and garnish with extra mint and basil leaves

6. Serve immediately

Notes

Always add dressing just before serving to prevent watermelon from becoming soggy.

The honey lime dressing can be made 2 to 3 days ahead and stored separately.

Fresh blueberries are strongly recommended over frozen for best texture and appearance.
