Description

Creamy dill-flecked mashed potato rings piped and baked until golden then filled with savory tomato-glazed ground beef and red pepper. A visually stunning comfort food masterpiece perfect for dinner parties.


Ingredients

3 lbs russet potatoes peeled and cubed

4 tablespoons unsalted butter melted

1/2 cup heavy cream

2 large egg yolks at room temperature

3 tablespoons fresh dill finely chopped

1 teaspoon fine sea salt

1 lb lean ground beef 90/10

1 large red bell pepper diced small

1 small yellow onion finely minced

3 tablespoons tomato paste

1 teaspoon smoked paprika

1/2 teaspoon cracked black pepper

Salt to taste


Instructions

1. Preheat oven to 425F (220C) and line a baking sheet with parchment paper

2. Boil cubed potatoes in salted water 15 to 20 minutes until tender then drain and steam-dry 2 minutes

3. Rice potatoes into a bowl and fold in butter cream egg yolks 2 tablespoons dill and salt while hot

4. Brown ground beef in a skillet then add bell pepper and onion and cook until softened

5. Add tomato paste smoked paprika and water stirring until beef is coated in thick tomato glaze

6. Transfer warm potato mixture to piping bag with large star tip

7. Pipe 3-inch base circles on baking sheet then add 2 rings on edges to form nest walls

8. Pre-bake nests 8 to 10 minutes then fill with beef mixture

9. Bake 10 to 12 more minutes until peaks are golden brown

10. Garnish with remaining dill and smoked paprika and serve immediately

Notes

Steam-dry potatoes after draining for stable nest structure.

Pipe potato mixture while warm to prevent clogging the tip.

Use 90/10 lean beef to prevent excess grease softening the nests.
