Description
A vibrant and easy street corn pasta salad with sweet corn, cherry tomatoes, feta cheese, fresh cilantro, and a zesty lime-chili dressing. Ready in 25 minutes and perfect for any summer occasion!
Ingredients
8 oz rotini pasta
1 cup corn kernels fresh frozen or canned
1 cup cherry tomatoes halved
1/2 cup red onion finely chopped
1/2 cup crumbled feta cheese or cotija
1/4 cup fresh cilantro chopped
1/4 cup mayonnaise
2 tablespoons sour cream
1 tablespoon fresh lime juice
1 teaspoon chili powder
1/2 teaspoon garlic powder
Salt and black pepper to taste
Instructions
1. Cook rotini in generously salted boiling water until al dente 8 to 10 minutes. Drain and rinse under cold water until fully cooled.
2. Halve cherry tomatoes, chop red onion, cilantro, and prepare corn.
3. Whisk mayo, sour cream, lime juice, chili powder, garlic powder, salt, and pepper in a small bowl until smooth.
4. In a large bowl combine cooled pasta, corn, cherry tomatoes, red onion, feta, and cilantro.
5. Pour dressing over the salad and toss gently until everything is evenly coated.
6. Cover and refrigerate at least 30 minutes. Stir and adjust seasoning before serving.
Notes
Use cotija cheese for a more authentic street corn flavor.
Chill for at least 30 minutes before serving for the best flavor development.
Tastes even better the next day.
Add grilled chicken or black beans to make it a complete meal.
For a spicier version add diced jalapeño to the dressing.
