Street Corn Creamy Cucumber Chicken Salad with diced grilled chicken, sweet charred corn, crisp cucumber, and a smoky lime mayo Greek yogurt dressing, finished with cilantro and optional feta. A vibrant refreshing summer main dish salad ready in 30 minutes.
Ingredients
2 cups grilled or roasted chicken diced
1 cup sweet corn grilled or canned
1 large cucumber diced
1/2 cup red onion finely chopped
1/2 cup mayonnaise
2 tablespoons Greek yogurt
1 tablespoon lime juice
1 tablespoon cilantro chopped
1 teaspoon smoked paprika
1 teaspoon salt to taste
1/2 teaspoon black pepper
Optional: crumbled feta cheese for garnish
Instructions
1. Grill or roast chicken until fully cooked then dice into bite-sized pieces
2. Grill fresh corn until charred and cut kernels off cob or use well-drained canned corn
3. Dice cucumber and finely chop red onion
4. Combine mayonnaise Greek yogurt lime juice smoked paprika salt and pepper in large bowl until smooth
5. Add chicken corn cucumber and onion to dressing and fold gently to coat
6. Toss in chopped cilantro and mix well
7. Taste and adjust seasoning then chill 10 minutes before serving
8. Garnish with crumbled feta if desired and serve
Notes
Add cucumber just before serving for the best crisp texture.
Drain canned corn very well if using instead of fresh grilled corn.
Chilling briefly before serving allows the flavors to meld beautifully.
