Description
Strawberry Spinach Salad with juicy strawberries, creamy avocado, feta, red onion, and toasted almonds and pistachios over fresh spinach, drizzled with a homemade strawberry balsamic vinaigrette. A sweet tangy crunchy creamy summer salad ready in 22 minutes.
Ingredients
1 package 5 ounces organic spinach
8 ounces strawberries halved about 2 cups
1 large avocado sliced
1/2 small red onion thinly sliced
1/2 cup feta crumbles
1/3 cup raw sliced almonds
1/4 cup chopped shelled roasted pistachios
3 tablespoons balsamic vinegar
1/4 cup olive oil
1 garlic clove grated or finely minced
1/2 teaspoon Dijon mustard
1/2 tablespoon strawberry jam or jam of choice
Freshly ground salt and pepper to taste
Instructions
1. Add all dressing ingredients to a jar or bowl and shake or whisk well then taste and adjust
2. Toast almonds in a dry pan over medium heat 2 to 5 minutes until golden then cool
3. Add spinach to large bowl as base
4. Layer on strawberries avocado red onion feta toasted almonds and pistachios
5. Drizzle with dressing now or set aside for individual servings
6. Top with extra almonds and dressing before serving
Notes
Use firm rather than very ripe avocado so slices hold their shape.
Add dressing just before serving since spinach absorbs moisture quickly.
Substitute other berries like blueberries or raspberries if strawberries are unavailable.
