Description
These S’mores Cookie Bars combine all the classic campfire flavors of s’mores into a chewy gooey easy-to-make dessert bar. Perfect for parties potlucks and family treats.
Ingredients
1 cup unsalted butter softened
1 cup brown sugar packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup graham cracker crumbs
1 cup chocolate chips
1 cup mini marshmallows
Extra chocolate chips and mini marshmallows for topping
Instructions
1. Preheat oven to 350F (175C) and grease or line a 9×13-inch baking pan
2. Cream butter brown sugar and granulated sugar until light and fluffy 2 to 3 minutes
3. Add eggs one at a time beating well then stir in vanilla extract
4. Whisk together flour baking soda and salt in a separate bowl
5. Gradually add dry ingredients to butter mixture stirring until just combined
6. Fold in graham cracker crumbs and chocolate chips
7. Press half the dough evenly into the prepared pan
8. Scatter mini marshmallows over the dough layer
9. Spoon remaining dough on top and press gently to cover
10. Top with extra chocolate chips and mini marshmallows
11. Bake 25 to 30 minutes until golden brown
12. Cool 10 minutes in pan then transfer to wire rack before slicing
Notes
Do not overbake. Bars will look slightly underdone in center but set as they cool.
Butter must be fully softened before creaming for best texture.
Store in airtight container at room temperature for up to 5 days.
