Description

Slow Cooker Steak and Cheddar Potato Casserole with seared tender steak, layered thinly sliced potatoes, sweet onions, and plenty of melted cheddar, all bound in a rich cream of mushroom and sour cream sauce. A hearty stick-to-your-ribs comfort dinner.


Ingredients

2 lbs beef sirloin steak or chuck cut into bite-size cubes

6 medium russet potatoes peeled and thinly sliced

1 medium onion thinly sliced

3 cloves garlic minced

2 cups shredded sharp cheddar cheese

1 1/2 cups beef broth

1 cup sour cream

1 can 10.5 oz condensed cream of mushroom soup

1 teaspoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt or to taste

1/2 teaspoon black pepper

2 tablespoons olive oil for browning steak

2 tablespoons fresh parsley chopped for garnish


Instructions

1. Heat olive oil in skillet sear seasoned steak cubes until browned on all sides not fully cooked then remove

2. Whisk cream of mushroom soup sour cream beef broth Worcestershire garlic powder and onion powder until smooth

3. Grease slow cooker and layer half the potatoes onions steak and cheddar

4. Pour half the sauce over layers then repeat with remaining ingredients

5. Cover and cook on LOW 6 hours or HIGH 3 to 4 hours until potatoes are fork tender and steak is cooked through

6. Sprinkle remaining cheddar over top during last 10 minutes cover until melted

7. Garnish with parsley and serve hot

Notes

Sear the steak first for significant added flavor depth.

Stick to the recommended broth amount to avoid a watery casserole.

Can be prepped and layered the night before and refrigerated.
