Description
Skillet Zucchini and Mushrooms with golden caramelized zucchini, deeply browned button mushrooms, softened onions, fragrant garlic and fresh herbs, finished with vegetable broth, parsley, and parmesan. A flavorful 25-minute one-pan side dish.
Ingredients
1 tablespoon olive oil
3 tablespoons butter divided
2 small zucchini cut into thin half-moon slices
Salt and black pepper to taste
1 small yellow onion finely diced
1 pound small button mushrooms cleaned and patted dry
3 to 4 cloves garlic minced
2 teaspoons fresh chopped herbs thyme and oregano or 1 teaspoon dried
1/4 cup vegetable broth
Chopped fresh parsley for garnish
Grated parmesan for garnish
Instructions
1. Heat olive oil and 1/2 tablespoon butter in large skillet over medium-high heat
2. Add zucchini season with salt and pepper and cook 3 to 4 minutes until fork-tender and golden then remove and set aside wiping skillet if needed
3. Return skillet to heat add remaining butter and saute onion 2 minutes until softened
4. Add mushrooms and cook 5 to 7 minutes until tender and deeply browned
5. Add garlic and herbs and cook 20 seconds until fragrant
6. Return zucchini to skillet mix and cook 1 minute
7. Pour in vegetable broth and cook 2 minutes
8. Taste adjust seasoning remove from heat and sprinkle with parsley and parmesan
Notes
Pat mushrooms completely dry before cooking for proper browning.
Cook zucchini separately first to prevent the dish from becoming watery.
Wipe out skillet between steps if excess liquid accumulates.
