  1. In a medium bowl, toss the chicken cubes with 1 tablespoon of olive oil, salt, pepper, and Italian herbs.nHeat the remaining 1 tablespoon of olive oil in a large skillet over medium high heat. Add the seasoned chicken and cook for 5-7 minutes, or until cooked through and lightly browned, turning occasionally. Remove the chicken from the skillet and set aside.nAdd the chopped onion to the skillet and cook for 2-3 minutes, until softened. Then, add the minced garlic and cook for another minute, until fragrant.nAdd the sliced zucchini to the skillet and cook for 5-7 minutes, or until tender-crisp, stirring occasionally.nReturn the cooked chicken to the skillet with the zucchini. Stir in the lemon juice. Cook for another 1-2 minutes, allowing the flavors to meld together.nGarnish with fresh parsley (and red pepper flakes, if desired). Serve immediately.
