Description

Rotel Cream Cheese Sausage Balls made with savory ground sausage, rich cream cheese, zesty drained Rotel tomatoes, sharp cheddar, and baking mix, baked into golden cheesy bites. The ultimate easy party appetizer ready in 40 minutes.


Ingredients

1 pound ground pork sausage mild or spicy

1 can 10 oz Rotel tomatoes with green chilies well drained

8 oz cream cheese softened

2 cups shredded cheddar cheese sharp or mild

1 1/2 cups Bisquick baking mix or similar biscuit mix

1/2 teaspoon garlic powder optional

1/2 teaspoon onion powder optional

Pinch of black pepper


Instructions

1. Preheat oven to 375F (190C) and line baking sheet with parchment paper

2. Combine sausage and softened cream cheese in large bowl until smooth

3. Stir in well-drained Rotel and shredded cheddar until evenly distributed

4. Gradually add Bisquick garlic powder onion powder and pepper mixing until thick dough forms

5. Roll mixture into 1-inch balls and place 1 inch apart on baking sheet

6. Bake 22 to 25 minutes until golden brown and cooked through

7. Rest 5 minutes before serving

Notes

Drain Rotel tomatoes very well to prevent overly wet dough.

Do not over-soften cream cheese beyond room temperature.

Can be shaped ahead and refrigerated up to 24 hours before baking.
