Description
Golden buttery Peach Crumb Bars with a tender pressed crust, juicy lemon and cinnamon peach filling, and a crisp crumbly topping baked until golden. A bakery-worthy summer dessert that comes together in one bowl.
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
170g (3/4 cup) unsalted butter melted
1 large egg
1 teaspoon vanilla extract
3 cups fresh peaches peeled and diced
2 tablespoons cornstarch
1/4 cup sugar for filling
1 tablespoon lemon juice
1/2 teaspoon cinnamon
Instructions
1. Preheat oven to 180C (350F) and line baking pan with parchment
2. Combine flour granulated sugar brown sugar baking powder and salt in large bowl
3. Add melted butter egg and vanilla and stir until crumbly dough forms
4. Press two-thirds of dough firmly into bottom of pan
5. Mix peaches with sugar cornstarch lemon juice and cinnamon until coated
6. Spread peach filling evenly over crust reaching all corners
7. Crumble remaining dough over the top leaving small gaps
8. Bake 35 to 40 minutes until golden and filling bubbles
9. Cool completely in pan before lifting and slicing into squares
Notes
Use ripe but firm peaches to avoid a soggy filling.
Press the base layer firmly for a sturdy foundation.
Cool completely before slicing for the cleanest cuts.
