Description
A hearty and flavorful one pan dinner with smoky kielbasa, golden crispy potatoes, and colorful vegetables. Ready in just 35 minutes with minimal cleanup!
Ingredients
12 oz smoked kielbasa sliced into 1/2-inch rounds
1 lb baby red or Yukon gold potatoes cut into bite-sized pieces
1 large bell pepper sliced into strips
1 medium onion sliced
1 cup green beans trimmed
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt plus more to taste
1/4 teaspoon black pepper
1 tablespoon fresh parsley chopped for garnish
Instructions
1. Wash and cut potatoes into even bite-sized pieces. Slice kielbasa into 1/2-inch rounds. Prepare bell pepper, onion, and green beans.
2. Combine all ingredients in a large bowl. Drizzle with olive oil and season with paprika, garlic powder, salt, and pepper. Toss to coat evenly.
3. Oven method: Preheat oven to 400F. Spread in a single layer on a large baking sheet. Roast 25 to 30 minutes stirring halfway until potatoes are golden and kielbasa is browned.
4. Stovetop method: Heat a large skillet over medium heat. Add seasoned mixture and cook 20 to 25 minutes stirring occasionally until potatoes are tender and kielbasa is nicely browned.
5. Garnish with fresh parsley and serve immediately.
Notes
Cut all ingredients to similar sizes for even cooking.
Do not crowd the pan when roasting for crispy edges.
Stovetop method: stir occasionally rather than constantly for better browning.
Substitute vegetables freely based on what you have available.
Turkey kielbasa works well for a lighter version.
