Ingredients
2 tablespoons butter or olive oil
1 medium onion finely chopped
3 cloves garlic minced
8 ounces fresh mushrooms sliced white button or cremini
1 cup long-grain white rice rinsed and drained
2 cups low-sodium chicken or vegetable broth
1/2 teaspoon salt adjust to taste
1/4 teaspoon black pepper
1/4 teaspoon dried thyme optional
2 tablespoons fresh parsley chopped for garnish
Instructions
1. Melt butter in saucepan and cook onion 3 to 4 minutes until soft then add garlic 30 seconds
2. Add mushrooms and saute 5 to 6 minutes until browned and moisture released
3. Stir in rice and cook 1 to 2 minutes to toast and absorb flavors
4. Pour in broth season with salt pepper and thyme and bring to gentle boil
5. Reduce heat cover and simmer 15 to 18 minutes until rice is tender and liquid absorbed
6. Remove from heat rest covered 5 minutes then fluff with fork
7. Garnish with parsley and serve warm
Notes
Browning the mushrooms properly is essential for deep flavor.
Avoid lifting the lid while the rice simmers to retain steam.
Let the rice rest 5 minutes before fluffing for the best texture.
