Description
A stunning Mediterranean Rice and Beans bowl with golden turmeric long-grain rice, toasted chickpeas, fresh parsley and dill, and charred lemon slices finished with extra-virgin olive oil. A vibrant healthy plant-based dinner ready in 40 minutes.
Ingredients
1 1/2 cups long-grain rice rinsed until clear
1 can 15 oz chickpeas rinsed and dried thoroughly
3 tablespoons extra-virgin olive oil divided
3 cups vegetable broth
1 teaspoon ground turmeric
1 large lemon half juiced half sliced for charring
1/2 cup fresh flat-leaf parsley finely chopped
1/2 cup fresh dill finely chopped
1/4 teaspoon red pepper flakes
1/2 teaspoon cracked black pepper
Salt to taste
Instructions
1. Rinse rice under cold water until water runs clear and drain chickpeas and pat bone dry
2. Heat 2 tablespoons olive oil in a heavy pot and toast chickpeas 5 to 7 minutes until lightly golden
3. Remove half chickpeas for garnish then add rinsed rice and turmeric and stir 2 minutes until nutty
4. Add vegetable broth and salt bring to boil then reduce to lowest heat cover and simmer 15 to 18 minutes
5. Do not lift the lid during cooking
6. Char lemon slices in a dry hot cast iron skillet 1 to 2 minutes per side until edges blacken
7. After cooking remove from heat and rest covered 5 minutes then fluff rice with a fork
8. Fold in parsley dill and lemon juice while rice is still hot
9. Transfer to rustic bowl top with reserved chickpeas charred lemons pepper flakes and olive oil drizzle
Notes
Never lift the lid while rice simmers for perfectly fluffy grains.
Add fresh herbs only after removing from heat to preserve vibrant color.
Pat chickpeas completely dry before toasting for the best golden sear.
