Description
Mediterranean Lemon Chickpea Patties made with mashed chickpeas, fresh herbs, lemon zest, and warm spices, pan-fried until golden and crispy, served with a creamy garlic lemon yogurt sauce. A wholesome vegetarian dinner ready in 40 minutes.
Ingredients
1 can 15 oz chickpeas drained and rinsed
1 small onion finely chopped
2 cloves garlic minced
1/4 cup fresh parsley chopped
1/4 cup fresh cilantro chopped
Zest and juice of 1 lemon
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
3/4 cup breadcrumbs or gluten-free alternative
1 egg lightly beaten or flax egg for vegan
1 cup plain yogurt Greek or regular
1 clove garlic minced for sauce
1 tablespoon lemon juice for sauce
Salt and pepper to taste for sauce
Sprinkle of fresh dill or mint optional
Instructions
1. Mash chickpeas with fork until mostly smooth but textured
2. Add onion garlic herbs lemon zest juice cumin paprika salt pepper breadcrumbs and egg and mix until firm but moist
3. Shape into palm-sized patties about 1/2 inch thick
4. Heat olive oil in large skillet and cook patties 4 to 5 minutes per side until golden and crispy
5. Whisk yogurt sauce ingredients together while patties cook
6. Drizzle patties with yogurt sauce and serve warm
Notes
Leave some texture when mashing chickpeas for the best bite.
Chill formed patties 30 minutes before cooking for easier handling.
Can be baked at 400F for 20 minutes flipping halfway as an alternative to frying.
