Description
A wholesome Mediterranean Chicken Zucchini Bake loaded with fresh vegetables bold herbs and golden melted cheese. Ready in under an hour and perfect for busy weeknights.
Ingredients
2 boneless skinless chicken breasts cut into bite-sized pieces
2 medium zucchinis sliced into half-moons
1 cup cherry tomatoes halved
1/2 red onion thinly sliced
2 cloves garlic minced
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes optional
1/2 cup shredded mozzarella or feta cheese
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley chopped for garnish
Instructions
1. Preheat oven to 375F (190C) and lightly grease a 9×13-inch baking dish with olive oil
2. Toss chicken zucchini cherry tomatoes red onion and garlic with olive oil and all spices until evenly coated
3. Spread mixture evenly into the prepared baking dish in a single layer
4. Sprinkle mozzarella and Parmesan cheese over the top
5. Cover with foil and bake for 20 minutes
6. Remove foil and bake another 10 to 15 minutes until cheese is golden and chicken reaches 165F
7. Remove from oven garnish with fresh parsley rest 5 minutes and serve warm
Notes
Pat zucchini dry before baking to avoid excess moisture.
Chicken thighs can replace breasts for a juicier result.
Swap mozzarella for feta for a more authentic Mediterranean flavor.
