Description
Juicy Mediterranean Chicken Tenders marinated in fresh lemon juice, garlic, oregano, thyme, and paprika then baked golden at 400F. A healthy high-protein 35-minute dinner served with tzatziki and fresh vegetables.
Ingredients
1 lb skinless boneless chicken tenders
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
2 cloves garlic minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon salt to taste
1/2 teaspoon freshly ground black pepper
1 cup tzatziki sauce for serving
1 cup fresh mixed greens
1 cup cherry tomatoes halved
Instructions
1. Whisk olive oil lemon juice garlic oregano thyme paprika salt and pepper together until emulsified
2. Add chicken tenders and toss until every surface is evenly coated
3. Cover and refrigerate minimum 30 minutes or up to 2 hours
4. Preheat oven to 400F (200C) and line baking sheet with parchment paper
5. Arrange marinated chicken in single layer without overlapping on prepared baking sheet
6. Bake 15 to 20 minutes until internal temperature reaches 165F with golden caramelized edges
7. Rest 5 minutes before serving to allow juices to redistribute
8. Serve alongside tzatziki sauce mixed greens and cherry tomatoes
Notes
Marinate minimum 30 minutes for best flavor penetration.
Rest chicken 5 minutes after baking for maximum juiciness.
Grill instead of bake for spectacular char marks and smoky flavor.
