Description

Marry Me White Beans with cannellini beans simmered in a creamy sauce of toasted tomato paste, oregano, paprika, sun-dried tomatoes, vegetable broth, and heavy cream, finished with wilted spinach and fresh basil. A comforting Italian-inspired 15-minute dinner.


Ingredients

2 tablespoons olive oil

1 medium onion finely chopped

2 cloves garlic minced

3 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon paprika

1 pinch red pepper flakes

2 cups white beans Cannellini or Great Northern drained and rinsed

1 cup sun-dried tomatoes

1 cup vegetable broth

1/2 cup heavy cream

2 cups fresh spinach

Fresh basil for garnish


Instructions

1. Heat olive oil and saute onion 5 minutes until translucent then add garlic 30 seconds

2. Stir in tomato paste oregano paprika and red pepper flakes and cook 2 minutes until slightly darkened

3. Add vegetable broth white beans and sun-dried tomatoes bring to gentle simmer and cook 4 to 5 minutes

4. Reduce heat and stir in heavy cream and spinach until spinach wilts about 2 to 3 minutes

5. Remove from heat garnish with fresh basil and serve hot with crusty bread

Notes

Toast tomato paste and spices before adding liquid for much deeper flavor.

Rinse beans thoroughly to reduce sodium and enhance flavor.

Add a splash of broth when reheating to restore creaminess.
