Description

Ingredients

2 pounds russet potatoes diced into bite-sized cubes

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 pound ground beef or ground turkey

1 tablespoon olive oil

2 tablespoons taco seasoning

1/2 cup tomato sauce

1/4 cup water

1 cup shredded cheddar or Mexican blend cheese

1 cup shredded lettuce

1 cup diced tomatoes

1 avocado sliced

1/2 cup sour cream

1/4 cup chopped fresh cilantro

1/4 cup sliced green onions

Optional jalapeño slices corn black beans hot sauce lime wedges


Instructions

1. Preheat oven to 425F (220C) and line a baking sheet with parchment paper

2. Toss diced potatoes with olive oil paprika garlic powder salt and pepper until evenly coated

3. Spread potatoes in a single even layer on the baking sheet

4. Roast 25 to 30 minutes flipping halfway through until golden and crispy

5. Heat olive oil in a skillet over medium heat and cook ground beef until browned then drain excess grease

6. Add taco seasoning tomato sauce and water and simmer 5 to 7 minutes until thickened

7. Divide hot crispy potatoes evenly between 4 serving bowls

8. Top with taco meat then cheese lettuce tomatoes avocado and sour cream

9. Sprinkle with cilantro and green onions and finish with lime juice or hot sauce

10. Serve immediately

Notes

Never crowd potatoes on the baking sheet for maximum crispiness.

Add fresh toppings right before serving to preserve texture.
