Ingredients
1.5 lb chicken thighs cut into 1-inch chunks
1 1/2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons unsalted butter
1 shallot minced
3 garlic cloves freshly minced
3/4 cup peach preserves
1/3 cup chicken broth
1 1/2 tablespoons honey
2 teaspoons Dijon mustard
1 teaspoon dried thyme
2 peaches sliced into 1/2-inch wedges
1/4 teaspoon red pepper flakes
1 teaspoon soy sauce
1/4 cup fresh basil leaves julienned
Instructions
1. Cut chicken into 1-inch chunks season with salt and pepper prep garlic shallot peaches and basil
2. Heat olive oil in oven-safe skillet and sear chicken 5 minutes per side until golden then remove
3. Melt butter in same skillet saute shallot 2 minutes then garlic 30 seconds
4. Add peach preserves chicken broth honey Dijon thyme red pepper flakes and soy sauce simmer 2 minutes until thickened
5. Return chicken to skillet add peach wedges and stir gently to coat
6. Bake at 375F for 15 to 20 minutes until chicken reaches 165F internally
7. Rest 2 minutes then plate and top with fresh basil
