Ingredients

1 lb boneless skinless chicken breast diced into 3/4-inch cubes

1/4 cup honey

3 tablespoons fresh lime juice

1 tablespoon olive oil for searing

Salt pepper and garlic powder to taste

1 1/2 cups long-grain white rice

Zest of 1 lime

2 tablespoons fresh cilantro finely chopped

Salt to taste

2 large ripe Hass avocados

Fresh lime juice to prevent browning

1/2 teaspoon sea salt

1/2 teaspoon red chili flakes for garnish

1/4 cup fresh cilantro for garnish


Instructions

1. Rinse rice and cook with water and salt for 15 minutes then stir in lime zest and cilantro while warm

2. Pat chicken cubes completely dry and season with salt pepper and garlic powder

3. Heat grill pan over medium-high heat with oil and sear chicken 2 to 3 minutes per side without moving

4. Whisk honey and lime juice then brush over chicken in the last 2 minutes until glistening

5. Mash avocados with lime juice and salt leaving visible chunks for texture

6. Pack warm rice firmly into a ring mold on a plate then top with chunky avocado and mound chicken on top

7. Carefully lift ring mold straight up and garnish with cilantro chili flakes and lime wedge

8. Serve immediately

Notes

Pat chicken dry before searing for deep sear marks not steaming.

Add honey glaze only in final 2 minutes to avoid burning.

Use warm rice and chunky avocado for best structural integrity.
