Description
Homemade Greek Fries baked until perfectly crispy, seasoned with oregano, dill, and garlic, then topped with crumbled feta cheese, fresh parsley, and chopped red onion. A delicious Mediterranean-inspired snack or side dish.
Ingredients
4 large Yukon Gold potatoes washed with skins on
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried dill
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 cup fresh parsley finely chopped
1 medium red onion finely chopped
1/4 cup feta cheese crumbled
Tzatziki aioli or lemon wedges optional for serving
Instructions
1. Preheat oven to 425F (220C)
2. Wash potatoes leaving skins on and cut into 1/3-inch wide sticks of uniform size
3. Place fries in a large bowl of cold water and soak for 10 to 15 minutes
4. Drain and dry fries thoroughly using a clean towel or paper towels
5. Toss dried fries with olive oil salt oregano dill black pepper and garlic powder until evenly coated
6. Line a baking sheet with parchment paper and spread fries in a single even layer with space between each
7. Bake for 15 minutes then flip each fry carefully
8. Return to oven and bake another 6 to 8 minutes until golden and crispy
9. Transfer to serving plate and immediately top with parsley red onion and crumbled feta
10. Serve warm with tzatziki aioli or lemon wedges alongside
Notes
Soaking the potatoes removes excess starch and is key for crispiness.
Never crowd the baking sheet or fries will steam instead of crisp.
Greek fries are best served warm immediately after baking.
