Description

Healthy Sweet Potato Lentil Patties that are gluten-free, plant-powered, and crispy golden outside with a fragrant spiced sweet potato and lentil interior. No flour, no eggs, no commercial binders. A nutritious and deeply delicious meal for any time of day.


Ingredients

2 medium organic sweet potatoes about 350g cooked

1 cup dry green or brown lentils rinsed

1/2 cup certified gluten-free rolled oats

3 tablespoons ground flaxseed

1/2 small red onion finely minced

2 cloves garlic grated

1/2 medium carrot finely grated

1/4 cup fresh flat-leaf parsley chopped

1/4 cup fresh cilantro chopped

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon ground coriander

3/4 teaspoon fine sea salt

1/4 teaspoon freshly cracked black pepper

2 to 3 tablespoons extra-virgin olive oil for frying


Instructions

1. Roast sweet potatoes at 400F 45 to 60 minutes until very tender then cool completely and mash

2. Cook lentils in water 20 to 25 minutes until tender then drain thoroughly dry and cool

3. Mix oats flaxseed paprika cumin coriander salt and pepper in a small bowl

4. Combine cooled sweet potato mash cooled dried lentils onion garlic carrot herbs and spice mixture and fold together

5. Rest mixture 10 minutes for flax to gel then refrigerate shaped patties 20 to 30 minutes

6. Heat olive oil in skillet over medium-low heat and cook patties 5 to 6 minutes per side until deeply golden

7. Transfer to wire rack and repeat with remaining patties

Notes

Drain and dry lentils completely for patties that hold together.

Always cool sweet potato fully before combining with other ingredients.

Chill shaped patties 20 to 30 minutes before frying for best stability.
