Description
Green Goddess Avocado Salad with crisp romaine, cucumber, and cherry tomatoes tossed in a thick herby avocado green goddess dressing, finished with chunks of ripe avocado and a scatter of mixed seeds. A fresh creamy 15-minute salad.
Ingredients
1 large romaine lettuce chopped
1 avocado sliced or cubed
1/2 cucumber diced
150g cherry tomatoes halved
2 tablespoons mixed seeds sunflower or pumpkin
1/2 ripe avocado for dressing
2 tablespoons olive oil
2 tablespoons Greek yogurt
1 tablespoon lemon juice
1 small garlic clove
1 handful fresh herbs parsley basil or a mix
Salt and black pepper to taste
Instructions
1. Blend avocado olive oil yogurt lemon juice garlic and herbs until smooth and thick but spoonable
2. Add chopped lettuce to large bowl and scatter in cucumber and tomatoes
3. Spoon dressing over salad and toss gently to lightly coat
4. Add avocado last folding through carefully to keep its shape
5. Sprinkle mixed seeds over the top and add final seasoning if needed
6. Serve in a wide bowl with extra avocado slices on top
Notes
Use ripe but firm avocado so it holds its shape in the salad.
Keep the dressing thick so it coats rather than pools.
Add seeds at the end so they stay crisp.
