Ingredients

  • 1 pound pasta (fettuccine or linguine)
  • 8 ounces fresh spinach
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • Pinch of nutmeg
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Reserve 1 cup pasta water.
  2. Sauté minced garlic in olive oil until fragrant.
  3. Add spinach and cook until wilted.
  4. Puree spinach and garlic mixture in a food processor.
  5. Melt butter in a skillet, add heavy cream, and simmer.
  6. Stir in Parmesan cheese, lemon juice, nutmeg, salt, and pepper.
  7. Add spinach puree to the cream sauce and mix well.
  8. Add cooked pasta to the skillet and toss to coat. Add pasta water if needed.
  9. Serve immediately, garnished with extra Parmesan cheese.
