A refreshing no-cook Easy Summer Peach Watermelon Salad made with ripe peaches juicy watermelon fresh mint and a touch of citrus. Perfect for hot days picnics and barbecues.
Ingredients
3 ripe peaches sliced into wedges or bite-sized pieces
4 cups seedless watermelon cubed into 1-inch pieces
2 tablespoons fresh mint leaves roughly chopped or torn
1 tablespoon fresh lemon or lime juice
1 teaspoon extra-virgin olive oil optional
Cracked black pepper to taste
Pinch of sea salt
Instructions
1. Slice peaches into wedges or bite-sized pieces
2. Cube watermelon into 1-inch chunks and remove any seeds
3. Roughly tear or chop fresh mint leaves
4. In a large bowl combine watermelon and peach pieces
5. Scatter mint over the fruit
6. Add a pinch of sea salt and cracked black pepper
7. Drizzle with lemon or lime juice and olive oil if using
8. Gently toss everything together with a soft hand
9. Chill 15 to 20 minutes if desired then serve cold
Notes
Use fully ripe fruit for maximum sweetness and flavor.
Add mint just before serving to keep it vibrant and fresh.
Store dressing separately if prepping ahead.
