Description
Creamy Garlic Butter Melting Cabbage featuring seared green cabbage wedges baked in a silky garlic butter parmesan cream sauce until the edges caramelize and the centers become fork-tender and almost silky. A luxurious low-carb side dish.
Ingredients
1 medium green cabbage cut into 8 wedges core attached
2 tablespoons olive oil for searing
3 tablespoons unsalted butter
1 medium onion minced
5 to 6 cloves garlic minced
1 cup chicken broth low-sodium
1 cup heavy cream
1 cup parmesan cheese freshly grated
2 tablespoons chili oil optional
1 teaspoon dried oregano
1/2 teaspoon salt
Freshly ground black pepper to taste
2 teaspoons cornstarch optional
1 to 2 tablespoons cold water if using cornstarch
Chopped parsley for garnish
Instructions
1. Preheat oven to 350F (180C) and cut cabbage into 8 wedges keeping core attached
2. Sear wedges flat-side down in olive oil 2 to 3 minutes per side until golden then transfer to baking dish
3. Melt butter in same skillet and soften onion and garlic without browning
4. Add chicken broth simmer scraping up bits then stir in cream parmesan chili oil oregano salt and pepper
5. Simmer sauce until smooth and slightly thickened adding cornstarch slurry if thicker sauce desired
6. Pour sauce evenly over cabbage wedges in baking dish
7. Bake 45 to 50 minutes until fork-tender and golden on top
8. Garnish with parsley and serve warm
Notes
Never skip searing to prevent watery flavor in the finished dish.
Keep core intact on wedges so they hold together during cooking.
Freshly grated parmesan melts more smoothly into the cream sauce.
