Coconut Lime Ice Cream with just 4 ingredients: full-fat coconut milk, fresh lime juice, sweetener, and sea salt. A smooth creamy dairy-free vegan and paleo frozen dessert that is everyone’s tropical favorite. Ready in 35 minutes.
Ingredients
3 1/2 cups full-fat coconut milk room temperature
2/3 cup sweetener agave nectar maple syrup honey or allulose for keto
1/2 cup fresh lime juice from 3 to 4 limes
1/4 to 1/2 teaspoon sea salt depending on salt intensity
Instructions
1. Ensure ice cream maker bowl is completely frozen minimum 24 hours and place storage container in freezer to pre-chill
2. Ensure coconut milk is at room temperature not cold from refrigerator
3. Place all four ingredients in blender and puree 25 seconds until completely smooth
4. Start ice cream maker and slowly pour in blended mixture
5. Churn approximately 25 minutes until expanded in volume and frozen to soft-serve consistency
6. Serve immediately as soft serve or transfer to pre-chilled container
7. Press parchment paper directly onto ice cream surface to prevent crystals
8. Freeze minimum 2 hours for firmer texture then remove 20 minutes before serving to temper
Notes
Use room temperature not cold coconut milk for smooth even blending.
Always use freshly squeezed lime juice for the most vibrant tropical flavor.
Remove from freezer 20 minutes before serving for ideal scoopable consistency.
