Description

Cinnamon Roll Banana Bread combining moist mashed banana batter with a swirled brown sugar cinnamon layer and finished with a simple sweet glaze. A bakery-quality fusion treat perfect for breakfast or dessert.


Ingredients

3 medium ripe bananas mashed

1/3 cup unsalted butter melted

1 large egg room temperature

1 teaspoon vanilla extract

1 cup granulated sugar

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups all-purpose flour sifted

1/2 cup brown sugar packed for swirl

1 tablespoon ground cinnamon

1 cup powdered sugar sifted for glaze

2 tablespoons milk for glaze

1/2 teaspoon vanilla extract for glaze


Instructions

1. Preheat oven to 350F (175C) and grease 9×5 inch loaf pan

2. Mash bananas mix in melted butter then egg and vanilla

3. Whisk sugar baking soda salt and flour in separate bowl and gradually combine with banana mixture

4. Combine brown sugar and cinnamon for swirl

5. Pour half batter in pan sprinkle half cinnamon mixture pour remaining batter top with rest of cinnamon and swirl with knife

6. Bake 55 to 60 minutes until toothpick comes out clean

7. Cool 10 minutes in pan then transfer to wire rack to cool completely

8. Whisk glaze ingredients and drizzle over cooled loaf before slicing

Notes

Avoid overmixing the batter to prevent a dense loaf.

Always glaze only after the bread has cooled completely.

Use very ripe bananas with brown spots for maximum moisture and sweetness.
