Ingredients
1 can chickpeas drained and rinsed
2 cups cooked beets chopped
1 cup feta cheese crumbled
1/2 cup red onion thinly sliced
1/4 cup fresh parsley chopped
3 tablespoons olive oil
2 tablespoons lemon juice
1 clove garlic minced
Salt and pepper to taste
Instructions
1. Combine chickpeas beets feta red onion and parsley in large bowl
2. Whisk olive oil lemon juice garlic salt and pepper in small bowl for vinaigrette
3. Pour vinaigrette over salad and toss gently to combine
4. Chill 30 minutes for best flavor or enjoy freshly tossed
Notes
Drain chickpeas very thoroughly before adding to avoid a watery salad.
Fresh roasted beets add deeper flavor than canned.
Store vinaigrette separately for longer freshness.
