Description
A stunning Cherry Pistachio Cheesecake with a buttery graham pistachio crust, creamy pistachio-infused filling, and a vibrant sweet cherry topping. Perfect for holidays celebrations or any special occasion.
Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup ground pistachios
3 tablespoons granulated sugar
5 tablespoons unsalted butter melted
16 oz cream cheese fully softened
1/2 cup granulated sugar
2 large eggs
1/2 cup sour cream
1/4 cup dry pistachio pudding mix
1 teaspoon pure vanilla extract
1 can 21 oz cherry pie filling
Extra chopped pistachios for garnish optional
Instructions
1. Preheat oven to 325F (160C) and grease or line a 9-inch springform pan
2. Combine graham crumbs ground pistachios sugar and butter and press firmly into pan bottom
3. Bake crust 8 minutes then cool
4. Beat softened cream cheese and sugar until completely smooth
5. Add eggs one at a time then sour cream pudding mix and vanilla and mix until silky
6. Pour filling over crust smooth top and tap pan to release air bubbles
7. Bake 45 to 50 minutes until edges are set and center jiggles gently
8. Turn off oven crack door and let cheesecake rest inside for 1 hour
9. Cool to room temperature then refrigerate covered for at least 4 hours or overnight
10. Spread cherry pie filling over chilled cheesecake garnish with pistachios and serve
Notes
Cream cheese must be fully at room temperature to avoid lumps.
Do not overbeat after adding eggs to prevent cracking.
Add cherry topping just before serving for best presentation.
