Description
A stunning no-bake Cherry Amaretto Tiramisu with amaretto-soaked ladyfingers, silky whipped mascarpone cream, fresh cherry layers, cocoa powder dusting, and optional dark chocolate shavings. An extraordinary Italian-inspired special occasion dessert.
Ingredients
1 cup fresh cherries pitted and halved
2 tablespoons powdered sugar for cherry mixture
1 cup mascarpone cheese at room temperature
1 cup heavy whipping cream cold
1/2 cup powdered sugar divided for cream
1/2 cup amaretto liqueur
1 teaspoon pure vanilla extract
24 ladyfinger biscuits savoiardi
Cocoa powder for dusting
Dark chocolate shavings optional garnish
Instructions
1. Combine cherries with 2 tablespoons powdered sugar and rest 10 minutes until juices release
2. Whip cold heavy cream until soft peaks then add remaining sugar and vanilla and whip to stiff peaks
3. Combine room temperature mascarpone with amaretto then fold in whipped cream in 3 stages until silky
4. Drain cherry syrup into shallow dish and add 2 tablespoons amaretto for dipping
5. Dip each ladyfinger in cherry-amaretto syrup 1 to 2 seconds per side
6. Layer half soaked ladyfingers in 9×9 dish then spread half mascarpone cream then half cherries
7. Repeat with remaining ladyfingers cream and cherries on top
8. Cover and refrigerate minimum 4 hours ideally overnight
9. Dust generously with cocoa powder and add chocolate shavings before serving
Notes
Mascarpone must be at room temperature for a smooth lump-free cream.
Dip ladyfingers maximum 2 seconds to avoid sogginess.
Overnight refrigeration produces the best texture and flavor.
