Description
A creamy comforting Cabbage Carbonara with roasted cabbage strips, crispy bacon, sautéed onion and garlic, heavy cream, and Parmesan. The perfect low-carb pasta substitute that is rich, silky, and deeply satisfying.
Ingredients
1/2 medium head of cabbage sliced into long thin strips
Olive oil for roasting
Salt to taste
1 medium onion finely chopped
2 garlic cloves minced
4 to 5 slices bacon chopped
1/2 cup heavy cream
1/4 cup freshly grated Parmesan cheese
1/4 teaspoon freshly cracked black pepper
Extra Parmesan and crispy bacon for serving
Instructions
1. Preheat oven to 400F (200C)
2. Slice cabbage into long thin strips toss with olive oil and salt and spread on baking sheet in single layer
3. Roast 10 to 15 minutes until edges begin to caramelize
4. Cook chopped bacon in a large skillet 2 to 3 minutes until starting to crisp
5. Add chopped onion and cook 2 to 3 minutes until soft then add garlic and cook 30 seconds
6. Pour in heavy cream add Parmesan and black pepper and simmer 2 to 3 minutes until slightly thickened
7. Add roasted cabbage and toss until evenly coated cook 1 to 2 more minutes
8. Serve immediately topped with extra Parmesan black pepper and crispy bacon
Notes
Do not overcrowd the baking sheet when roasting cabbage.
Do not overcook cabbage in the sauce to maintain a pasta-like chew.
Use freshly grated Parmesan for the smoothest silkiest sauce.
