Description
Broccoli Apple Salad with crisp broccoli florets, sweet-tart diced apples, shredded carrots, dried cranberries, crunchy sunflower seeds, and a creamy honey-dijon yogurt dressing. A refreshing no-cook potluck side dish ready in just 15 minutes.
Ingredients
4 cups fresh broccoli florets about 2 medium heads chopped small
2 medium apples sweet-tart like Honeycrisp or Gala diced
1/2 cup shredded carrots
1/3 cup dried cranberries
1/3 cup sunflower seeds or chopped pecans
1/4 cup red onion finely diced
1/2 cup shredded cheddar cheese optional
1/2 cup plain Greek yogurt or mayo or half and half
2 tablespoons apple cider vinegar
2 tablespoons honey or maple syrup
1/2 teaspoon dijon mustard
Pinch of salt and black pepper
Instructions
1. Wash and chop broccoli into small bite-sized florets
2. Dice apples leaving skin on and toss with lemon juice if not serving immediately
3. Combine broccoli apples carrots cranberries sunflower seeds red onion and cheddar in large bowl
4. Whisk yogurt or mayo apple cider vinegar honey dijon salt and pepper until smooth
5. Pour dressing over salad and toss until evenly coated
6. Serve immediately or refrigerate minimum 30 minutes reserving nuts until serving if making ahead
Notes
Toss diced apples with lemon juice to prevent browning if not serving right away.
Keep nuts or seeds separate until serving to maintain crunch.
Salad improves after a few hours in the refrigerator as flavors meld.
