Description
A rustic Blueberry Peach Crumble with juicy blueberries and sweet sliced peaches tossed in lemon and vanilla, topped with a buttery cinnamon oat crumble and baked until golden and bubbly. The perfect outstanding summer fruit dessert.
Ingredients
2 cups blueberries
2 1/2 cups peeled and sliced peaches about 5 to 6 peaches
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1/4 teaspoon vanilla extract
1/2 cup granulated sugar
1/4 cup all-purpose flour
1/2 cup all-purpose flour for topping
1/2 cup old-fashioned oats
1/3 cup brown sugar
1/4 cup granulated sugar for topping
1/2 teaspoon salt
1 teaspoon ground cinnamon
6 tablespoons cold butter diced
Instructions
1. Preheat oven to 350F (175C)
2. Combine blueberries peaches lemon juice lemon zest vanilla sugar and flour in large bowl and toss gently then set aside
3. Combine flour oats brown sugar granulated sugar salt and cinnamon in separate bowl and whisk together
4. Work cold diced butter into dry mixture with fingers until big crumbles form
5. Place fruit mixture in 2-quart baking dish and sprinkle crumble topping evenly over the top
6. Place dish on large baking sheet and bake 40 to 45 minutes until topping is browned and fruit is bubbly
7. Serve warm or at room temperature ideally with vanilla ice cream
Notes
Use the ripest blueberries and peaches available for the best flavor.
Keep butter cold when working into crumble for the best texture.
Place baking dish on a sheet pan to catch any bubbling fruit juices.
