Description
Berries and Cream Bars with a soft chewy sugar cookie crust, a silky white chocolate cream cheese frosting, and a generous topping of fresh mixed berries. An easy stunning summer dessert ready in 34 minutes.
Ingredients
3/4 cup sugar
1/4 cup powdered sugar
3/4 cup butter softened
1 teaspoon vanilla extract
2 large eggs
1 teaspoon baking powder
1/2 teaspoon salt
2 1/4 cups all-purpose flour
8 oz cream cheese room temperature
1 cup white chocolate chips melted
1/2 teaspoon vanilla extract for frosting
3 cups mixed fresh berries
Instructions
1. Preheat oven to 375F and spray 9×13 pan with cooking spray
2. Cream sugars and butter 3 minutes then mix in vanilla and eggs until smooth
3. Add baking powder salt and flour until just combined
4. Spread dough evenly in pan and bake 12 to 14 minutes do not overbake
5. Cool completely before frosting
6. Beat room temperature cream cheese until smooth then beat in melted white chocolate 2 to 3 minutes until silky
7. Spread frosting over cooled crust and top with fresh berries
8. Refrigerate until ready to serve then cut into bars
Notes
Do not overbake the crust since bars continue to firm up as they cool.
Always use room temperature cream cheese for a smooth lump-free frosting.
Add berries close to serving time for the freshest presentation.
