Description
These Baked Feta Eggs are a healthy flavorful Mediterranean breakfast featuring creamy melted feta roasted cherry tomatoes colorful vegetables and perfectly baked eggs. Naturally gluten-free and ready in 45 minutes.
Ingredients
2 cups cherry or grape tomatoes
1 red bell pepper diced
1/2 small red onion diced
3 cloves garlic minced
8 oz block feta cheese
4 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon sea salt
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
1/2 teaspoon red pepper flakes
1 cup chopped baby spinach
4 large eggs
Chopped fresh basil or chives for topping optional
Instructions
1. Preheat oven to 400F (200C)
2. Divide tomatoes bell pepper red onion garlic and feta between 4 ramekins or combine in one large dish
3. Drizzle olive oil over each dish
4. Mix oregano salt thyme black pepper and red pepper flakes and sprinkle over feta and vegetables
5. Place ramekins on baking sheet and bake for 25 minutes
6. Remove and stir so feta blends into vegetables then add spinach and stir until wilted
7. Create a well in each ramekin and crack one egg into each
8. Return to oven and bake 10 minutes until egg whites are set
9. Garnish with fresh basil or chives and serve with crusty bread or pita
Notes
Use block feta packed in brine for best flavor and creaminess.
Ramekins should hold at least 10 ounces each.
Watch eggs closely during final 10 minutes to avoid overcooking yolks.
