- 1 tablespoon olive oil
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 lemon, thinly sliced
- 2 tablespoons olive oil, divided
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh basil leaves, roughly chopped
Instructions
- Preheat oven to 450°F (232°C). Place pizza stone in oven if using.
- Roll out pizza dough to a 12 inch round and brush with 1 tablespoon olive oil.
- Combine ricotta and Parmesan cheese, season with salt and pepper, and spread over the dough.
- Arrange lemon slices over the cheese mixture; drizzle with remaining olive oil; sprinkle with red pepper flakes if desired.
- Transfer pizza to pizza stone or baking sheet.
- Bake for 12 15 minutes, or until crust is golden brown and cheese is bubbly.
- Remove from oven, let cool slightly, and top with fresh basil leaves.
- Slice and serve immediately.
