- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- 1. Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until well combined. Taste and adjust seasonings as needed.
- 2. Assemble the Salad: In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives.
- 3. Add Protein (Optional): If using, add the grilled chicken (or chickpeas) to the salad.
- 4. Dress the Salad: Pour the dressing over the salad and gently toss to coat evenly. Be careful not to overdress; you may not need all of the dressing.
- 5. Serve Immediately: For the best flavor and texture, serve the salad immediately after dressing or shortly after.
