  • 2 medium carrots, peeled and julienned
  • 1 medium onion, chopped
  • 8 cups beef broth (or vegetable broth)
  • 2 tablespoons tomato paste
  • 2 tablespoons white vinegar (or lemon juice to taste)
  • 1 teaspoon sugar (optional, adjust to taste)
  • 1 bay leaf
  • 2 cloves garlic, minced
  • Fresh dill, chopped, for garnish
  • Sour cream, for serving (optional)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add beets and carrots. Cook for 5 minutes, stirring occasionally.
  3. Stir in tomato paste and garlic. Cook for 1 minute.
  4. Pour in broth. Add bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer, covered, for 30 to 40 minutes.
  5. Stir in vinegar and sugar. Taste and adjust seasoning.
  6. Remove bay leaf. Ladle soup into bowls and garnish with dill and sour cream, if desired.
