- For the Strawberry Cream:
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons cream cheese, softened
- 1 tablespoon powdered sugar
- 1/4 teaspoon vanilla extract
Instructions
- 1. Prepare the oat mixture: In a medium bowl or jar, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and salt. Stir well to combine.
- 2. Make the strawberry cream: In a separate small bowl, combine the sliced strawberries, softened cream cheese, powdered sugar, and vanilla extract. Use a fork to mash the strawberries and blend with the cream cheese until smooth and creamy. If you prefer a chunkier texture, leave some strawberry pieces.
- 3. Assemble the overnight oats: Layer half of the oat mixture into the bottom of a jar or container. Top with half of the strawberry cream. Repeat the layers.
- 4. Refrigerate: Cover the jar or container and refrigerate for at least 4 hours, or preferably overnight. This allows the oats to soften and the flavors to meld together.
- 5. Serve: When ready to serve, give the overnight oats a good stir. Add additional sliced strawberries, a dollop of whipped cream, or a sprinkle of granola for extra flavor and texture.
