  • Total Time: 4 hours
  • Yield: 2 servings 1x

Description

A delightful and easy breakfast recipe featuring creamy overnight oats layered with a sweet and tangy strawberry cream. Perfect for a quick and healthy start to the day!

Ingredients

Scale
  • For the Oatmeal:
  • 1 cup rolled oats (not instant)
  • 1 1/2 cups milk (dairy or nondairy)
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup (or honey)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For the Strawberry Cream:
  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon powdered sugar
  • 1/4 teaspoon vanilla extract

Instructions

  1. 1. Prepare the oat mixture: In a medium bowl or jar, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and salt. Stir well to combine.
  2. 2. Make the strawberry cream: In a separate small bowl, combine the sliced strawberries, softened cream cheese, powdered sugar, and vanilla extract. Use a fork to mash the strawberries and blend with the cream cheese until smooth and creamy. If you prefer a chunkier texture, leave some strawberry pieces.
  3. 3. Assemble the overnight oats: Layer half of the oat mixture into the bottom of a jar or container. Top with half of the strawberry cream. Repeat the layers.
  4. 4. Refrigerate: Cover the jar or container and refrigerate for at least 4 hours, or preferably overnight. This allows the oats to soften and the flavors to meld together.
  5. 5. Serve: When ready to serve, give the overnight oats a good stir. Add additional sliced strawberries, a dollop of whipped cream, or a sprinkle of granola for extra flavor and texture.
