Instructions
- 1. Prepare the Chickpea Meatballs: In a food processor, combine chickpeas, rolled oats, parsley, garlic, cumin, smoked paprika, salt, and pepper until a coarse paste forms.n2. Shape the Meatballs: Roll into 1 inch meatballs.n3. Cook the Meatballs: Heat olive oil in a pot. Brown meatballs on all sides, about 5-7 minutes. Remove and set aside.n4. Sauté the Aromatics: Add remaining olive oil to the pot. Sauté onion until softened, then add garlic and cook until fragrant.n5. Create the Stew: Pour in crushed tomatoes, chickpeas, vegetable broth, harissa paste, oregano, salt, and pepper. Stir well.n6. Simmer the Stew: Bring to a simmer, return meatballs to the pot, cover, and simmer for 20-30 minutes.n7. Serve: Ladle into bowls and garnish with cilantro.
