Ingredients

  • For the Dough:
  • 1 1/2 cups warm water (105-115°F)
  • 1 tablespoon sugar
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 4 1/2 cups all purpose flour, plus more for dusting
  • 1 1/2 teaspoons salt
  • 1/4 cup unsalted butter, melted
  • For the Boiling Water Bath:
  • 8 cups water
  • 1/2 cup baking soda
  • For the Cinnamon Sugar Coating:
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. 1. In a large bowl, combine warm water, sugar, and yeast. Let stand for 5 minutes until foamy.
  2. 2. Add flour, salt, and melted butter to the yeast mixture. Mix until a shaggy dough forms.
  3. 3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. 4. Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
  5. 5. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  6. 6. In a large pot, bring 8 cups of water and baking soda to a boil.
  7. 7. Punch down the risen dough and divide it into 8 equal pieces.
  8. 8. Roll each piece of dough into a long rope, about 24 inches long. Shape each rope into a pretzel shape.
  9. 9. Carefully drop each pretzel into the boiling water for 30 seconds per side. Work in batches.
  10. 10. Remove the pretzels from the water and place them on the prepared baking sheet.
  11. 11. Bake for 12-15 minutes, or until golden brown.
  12. 12. While the pretzels are baking, prepare the cinnamon sugar coating. In a shallow bowl, combine sugar and cinnamon.
  13. 13. Once the pretzels are out of the oven, brush them with melted butter and immediately dip them into the cinnamon sugar mixture, coating them evenly.
