Ingredients

  • 4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh herbs (chives, parsley, thyme)
  • 1 3/4 cups buttermilk
  • 4 tablespoons unsalted butter, melted
  • 2 cups shredded sharp cheddar cheese, divided

Instructions

  1. Preheat your oven to 400°F (200°C). Grease and flour a 9 inch round cake pan or baking sheet.
  2. In a large bowl, whisk together the flour, baking soda, salt, and pepper.
  3. Stir in the chopped herbs and 1 1/2 cups of the shredded cheddar cheese, reserving the remaining 1/2 cup for topping.
  4. Make a well in the center of the dry ingredients and pour in the buttermilk and melted butter.
  5. Stir until just combined. The dough will be shaggy and slightly sticky. Do not overmix!
  6. Turn the dough out onto a lightly floured surface and gently shape it into a round loaf.
  7. Place the loaf in the prepared pan or on the baking sheet.
  8. Use a sharp knife to cut a cross into the top of the loaf, about 1/2 inch deep.
  9. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the loaf.
  10. Bake for 35 to 40 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out clean.
  11. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
