Description
An easy to make saucy bbq chicken sandwiches recipe with melt in your mouth tender chicken simmered in a sweet, tangy, and smoky homemade BBQ sauce.

- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups ketchup
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 6 hamburger buns or brioche buns
- Coleslaw (optional, for topping)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium high heat. Sear the chicken thighs on all sides until browned, about 2-3 minutes per side. Remove the chicken from the pot and set aside.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, chili powder, black pepper, and cayenne pepper (if desired). Bring to a simmer.
- Return the chicken thighs to the pot, making sure they are submerged in the sauce. Reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the chicken is easily shredded with a fork.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir to combine. Let simmer for another 10 minutes.
- Spoon the pulled bbq chicken onto hamburger buns. Top with coleslaw, if desired. Serve immediately.
