A quick and easy roasted sausage veggie pan loaded with Italian sausage and colorful vegetables all cooked together on one pan!
Ingredients

- 1 pound Italian sausage (sweet, mild, or hot), sliced into 1/2 inch pieces
- 1 large red onion, cut into wedges
- 2 bell peppers (any color), cored and cut into 1 inch pieces
- 2 zucchini, cut into 1/2 inch thick slices
- 8 ounces baby bella mushrooms, halved or quartered if large
- 1 pint cherry tomatoes
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the sliced sausage, red onion, bell peppers, zucchini, mushrooms, and cherry tomatoes.
- Add the minced garlic, olive oil, oregano, basil, and red pepper flakes (if using). Season generously with salt and pepper. Toss everything together until well coated.
- Spread the sausage and vegetable mixture in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25 to 30 minutes, or until the sausage is cooked through and the vegetables are tender and slightly caramelized. Toss the vegetables halfway through for even cooking.
- Remove from the oven and garnish with fresh chopped parsley.
