- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 box (3.4 ounces) instant pistachio pudding mix
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 1/2 cup chopped pistachios
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Add instant pistachio pudding mix and mix well.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in white chocolate chips and chopped pistachios.
- Drop by rounded tablespoons onto prepared baking sheets, leaving 2 inches between each cookie.
- Bake for 9 to 11 minutes, or until edges are lightly golden brown.
- Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
