  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 box (3.4 ounces) instant pistachio pudding mix
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. Add instant pistachio pudding mix and mix well.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  7. Fold in white chocolate chips and chopped pistachios.
  8. Drop by rounded tablespoons onto prepared baking sheets, leaving 2 inches between each cookie.
  9. Bake for 9 to 11 minutes, or until edges are lightly golden brown.
  10. Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
