- 1 large sweet potato, peeled and cubed
- 1 red onion, cut into wedges
- 2 carrots, peeled and chopped
- 1 bell pepper (any color), seeded and chopped
- 1 head of broccoli, cut into florets
- 8 ounces brussel sprouts, halved
- 3 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine all the vegetables: sweet potato, red onion, carrots, bell pepper, broccoli, and brussel sprouts.
- Drizzle the vegetables with olive oil.
- Sprinkle with rosemary, thyme, garlic powder, salt, and pepper.
- Toss everything together until all the vegetables are evenly coated with the oil and seasonings.
- Spread the vegetables in a single layer on a large baking sheet. Avoid overcrowding.
- Roast for 25 to 30 minutes, or until the vegetables are tender and slightly caramelized, remember to stir the veggies with a spatula to promote even cooking on all sides.
