  • 2 large bananas, mashed
  • 1/2 cup peanut butter, creamy or crunchy
  • 2 cups milk (dairy or non dairy)
  • 2 large eggs
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional toppings: Chocolate chips, chopped nuts, extra banana slices

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 12 cup muffin tin.
  2. In a large bowl, mash bananas, then add peanut butter, milk, eggs, maple syrup, and vanilla. Whisk well.
  3. Add rolled oats, baking powder, and salt to the wet ingredients. Stir until combined.
  4. Spoon mixture into muffin tin, filling each cup 3/4 full.
  5. Add desired toppings.
  6. Bake for 20-25 minutes until golden brown and toothpick comes out clean.
  7. Cool in muffin tin before removing.
